sourced ingredients in crafting premium ciders and perry. The all-natural ciders are made from fresh fruit grown on the owners fourth generation fruit

Rootstocks cider maker applies his viticulture knowledge and years of experience in European winemaking methods into crafting unique and exceptional New
World ciders. Carefully selecting heirloom American apples, he oversees each batch and carefully manages the fermentation process to ensure every batch
meets his high quality standards. Rootstock ciders have garnered medals at the prestigious Great Lakes International Cider & Perry Competition and
praise from discriminating cider connoisseurs.
Fruit Based Spirits
In 2012 the owner created Apple Country Spirits to produce fine quality fruit based spirits from the fruit grown right on the farm. Their flagship product
is a line of vodkas crafted from fresh, delicious apples. Being one of the very few types of vodka in the world created from using 100% all natural, gluten
locally grown, New York apples. Our climate, soils, and proximity to Lake Ontario make for the most ideal conditions to grow the best fruit in the world.

The distiller, an artisan in his own right, also creates another colonial era product Apple Jack, both aged and unaged, again from the apples grown on the
farm. Apple Country Spirits Brandy line represents the breadth of fruit grown on the farm, made from plums, cherries, apples and pears; this line
represents old world spirits that are not often found in the United States. Apple Country Spirits Apple Brandy is done in a French Calvados Style. The
distiller has recently added a line of fruit cordials and fruit wines that are just as discriminating as the rest of the line.
The hard cider is made and the spirits are distilled in a state-of-the-art 7,000 sq. foot building thats just five years old, with three phase electric
and in-floor heating. 5,000 sq. ft. is dedicated to production, 1,000 sq. ft. to a charming and hand crafted tasting room, with wood from older barns and
cherry trees from the farm. The copper still is 250 gallons; there is an additional 30,000 gallons of tankage as well as 33 barrels for aging the various
spirits, a bottler and a labeler as well as a full line of supporting production equipment.
Growing Demand for Apples for Hard Cider Production
Today, the global market consumes about 635 million gallons of hard cider a year, a number thats projected to grow. By 2020, 435 million tons of apples
will be needed to supply the worlds cider consumers, said Neil Macdonald of Orchard Park Farm and Orchard Pig, a cider business in southwest England.
Rootstock Cider Works and Apple Country Spirits is poised to meet that demand. A one hundred acre parcel of land with ~76 acres of apples could be invested
in, along with the cidery/distillery, for additional consideration.
This business has laid the ground work to meet the growing demand for farmstead craft hard ciders and spirits, demand for their high quality hard cider has
